AK Monkying Around Belgian Ale

Brewed: 03/22/1997

Ingredients:

4 lbs light DME
3.3 lbs light malt extract northwestern
1 lbs Clover honey
1 lb crystal malt 40 L
1 oz Styrian Goldings hops 4.5% AA 65 minutes
1/2 oz Bullion 9.2% AA 50 minutes
1/2 oz Kent Goldings 5.0% AA steeping
1 teaspoon Irish Moss
1 teaspoon Gypsum
Abbey Affligem Noel left in primary from previous beer

Add crushed crystal malt to 1 gallon of 150 degree water and hold for 30 minutes.
Strain into waiting kettle, already treated with gypsum, 1.5 gallon of water.
Add malt extract, honey, and boiling hops.
Bring to boil and boil 15 minutes.
Add Bullion, boil 35 minutes.
Add irish moss, boil 15 more minutes. Turn off heat.
Add Kent Goldings and steep 2 - 3 minutes.
Sparge into 3 gallons cold water in fermenter.
Secondary when fermentation stops.
Bottle after fermentation is complete.
